Muffins on the Daniel Fast?

I have been searching the web for more recipes. Bran muffins are my favorite and blueberry muffins are most of my family’s favorite. They are easy to make ahead and grab for a quick breakfast.

After much searching, I have found a muffin recipe that is good and allowable on the Daniel Fast. It is easy, but each measurement must be followed exactly for good muffins.

Banana Muffins

  • 3 bananas
  • 1 1/4 cups whole wheat flour
  • 1/2 cup honey
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1/4 cup oil
  • 1 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Mash bananas. Add all the other ingredients and mix until blended. This will not be thin like cake batter. I used a mini ice cream scoop to put in muffin papers. Bake for 18-20 minutes, until knife comes out clean. These muffins will be dark due to the whole wheat flour.

You can add other items like coconut, 3/4 cups fresh or thawed blueberries, raisins or other nuts.

I made two batches one with just bananas and the next with blueberries and bananas and both were delicious.

Being on the Daniel Fast has been a great experience for our family. My children and husband haven’t eaten things I don’t think they have ever eaten. We have all been stretched.

I have to tell you the best recipe I have made so far is the Corn Chowder it has been a hit both times. One of the things I like about it is there are no beans or tomatoes. Most of the recipes have a tomato base and this is a nice change.

Our family devotions have been insightful. The boys have shared and asked questions, as we have read the daily chapter of John. Tonight, Bryan wasn’t feeling well so the boys and I had devotions together. We all prayed for snow!
