Muffins on the Daniel Fast?

I have been searching the web for more recipes. Bran muffins are my favorite and blueberry muffins are most of my family’s favorite. They are easy to make ahead and grab for a quick breakfast.

After much searching, I have found a muffin recipe that is good and allowable on the Daniel Fast. It is easy, but each measurement must be followed exactly for good muffins.

Banana Muffins

  • 3 bananas
  • 1 1/4 cups whole wheat flour
  • 1/2 cup honey
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1/4 cup oil
  • 1 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Mash bananas. Add all the other ingredients and mix until blended. This will not be thin like cake batter. I used a mini ice cream scoop to put in muffin papers. Bake for 18-20 minutes, until knife comes out clean. These muffins will be dark due to the whole wheat flour.

You can add other items like coconut, 3/4 cups fresh or thawed blueberries, raisins or other nuts.

I made two batches one with just bananas and the next with blueberries and bananas and both were delicious.

I was researching foods for my hubby to have while on his daniel fast, and noticed that honey is not something he can have according to this website: http://danielfast.wordpress.com/2009/01/06/daniel…

Different hand outs have different information regarding honey. We have followed the same general list of foods for the last several of years. Each list I have seen is a little different.

I am using the brown rice honey. That is allowed on any version. It is in the orgainc section. I am going to make these this week. Thanks!

cool recipe. im making it with my daughter and 7 y/o SIL right now. i happened to have exactly 3 ripened bananas! i am on the daniel fast right now and therefore cannot have either honey or baking soda, but my hubby loves banana bread so ill make it for him using agave and coconut oil and when im done with the fast, ill make some more. this recipe goes well with how we usually eat :)

What kind of oil, vegetable or olive?

The muffins are wonderful for breakfast or if you a carving something sweet….this is the first year my family has done the Daniel Fast and it’s been great! Thank you for all the recipes!! ~:0) Blessings!
