Waiting

Waiting can be a good thing or annoying. It seems I spend a lot of time waiting these days. With football season, there are practices and games. Of course the team is required to be there earlier than the game.

After one of Noah’s recent football practices, I spent the evening with him in the emergency room. His arm was very swollen and looked like he could’ve had a fracture. More waiting involved.

Since it seems I am doing a lot of waiting, I decided to start carrying a book with me. I made it through 127 pages of The Big idea while Noah was asleep in the emergency room and we were waiting.

It is easy to get annoyed when waiting, but I am trying to learn to make every moment count. Using each moment to learn and not become stressed or iritated.

Noah’s arm was not broken just a huge contusion. Of course it didn’t stop him from making 13 tackles on Saturday!

Dinner Creation

Still trying new recipes and I actually created one on Saturday night. I had been to Harris Teeter for triple coupon day. I saved $60 with my triple coupons.

One of the items I bought with my triple coupons was a new item by Mrs. Dash called Mrs. Dash Terriyaki Marinade. The marinade cost $2.79 and I had a  $0.75 coupon. So after the coupon was tripled I paid $0.59 for the marinade. There is no sodium in the marinade a big switch from most high salt terriyaki sauces.

I made a Terriyaki stir fry with some ingredients I had at the house.

 

  • 1.5 lbs of Flank steak
  • 1 red and  2 yellow bell peppers chopped
  • 1 pkg of frozen snow pea pods
  • 1 15 oz.can of pineapple chunks
  • 1 bottle of Mrs. Dash terriyaki marinade

First I put the chopped bell peppers and cut up flank steak in a large skillet. When the steak started to brown I added the pineapple drained no juice. Then when the steak was almost brown I added the marinade and cooked for 2 minutes. Then I added the snow pea pods cooking for 2 more minutes.

I served this over cooked white rice. I used 2 cups of uncooked rice and started it before the stir fry. This whole meal including prep time took me about 30 minutes.
